Kohlrabi salad

Every time I eat kohlrabi I think of my father being in his beloved garden when we were with him he often would just pull a kohlrabi out of the ground cleaned and peeled it and cut it in half. We would eat them like apples they are so crunchy. We mainly had them raw in salads but they are also nice cooked.

 

3 Kohlrabi peel outer skin and cut in cubes

Juice of half a lemon

100g of cream fraiche

1/2 bunch of flat leave parsley, leaves only

Salt and pepper to taste

 

Put kohlrabi in a bowl whisk together lemon and cream fraiche pour over kohlrabi mix in parsley keep some parsley aside to decorate the top.
