Limoncello

As promised here is a limoncello recipe,  I make it for years there are always a couple of bottles in the freezer it originated from Belinda Jeffrey it is nice before and after dinner especially in summer, actually when I think about it I can drink limoncello anytime. As you only use the peel of the lemons we always make lemonade out of the juice so nothing is wasted.

8 lemons

1 lt of Vodka

500g of sugar

500 ml of water

juice of ½ lemon

Using a vegetable peeler, peel away the zest of each lemon making sure to trim off any white pith from the strips of zest. Put the zest in a  2 lt sterilised jar and cover zest with  500 ml vodka. Seal the jar tightly and leave in a dark cool place for 40 days. After this time place sugar and water in a pot bring to the boil stir until sugar is dissolved and simmer until it has a syrupy consistency put aside and let syrup cool completely. Now add the rest of the vodka, the syrup and lemon juice into the jar close tightly again and leave for an other 40 days then strain liquid through a sieve and fill into sterilised bottles you will have 1,5 lt. of limoncello. store bottles in freezer.
