We had this dish the first time when we travelled in Alsace (France) along the Rhine on the wine route going north, there are many variations, eat it as a snack with an ice cold beer or serve it with a green salad and you have a perfect lunch.
Preheat oven to 220 c
Olive oil Dough (makes 2)
150 g plain flour
2 tbsp of olive oil
Up to 4 tbsp of iced water
1/2 tsp of salt
Black forest ham or speck cut into chunks
1 brown onion thinly sliced
6 tbsp crème fraîche or sour cream
Blend flour and salt together in a food processor add oil, blitz slowly add water but stop as soon as the dough comes together. Form a ball and chill for 1/2 hour. Divide dough into two, roll out very thinly don’t worry if it is not round it looks nice free form, put on a baking tray lined with baking paper. If you can not fit the two on one use two. Spread 3 tbsp of the crème fraîche or sour cream on each base sprinkle black forest ham or speck then the onion over crème fraîche and bake in a preheated oven for 15 minutes check as the onion burn easy the base should be golden brown around the edges.
