Beef, Broccoli and Black Bean stir fry

Spring is definitely in the air I had a look around the garden what I can use for a stir fry I have to get the garden beds (we only have 2,5 beds) empty to get them ready for the summer vegetables. There is still plenty, we have broccoli, kale, the first snow peas, very exciting, chillies and shallots. Well you really don’t need more for a tasty stir fry.

Brocoli beef black bean stir fry-6016

1 tbsp vegetable oil

300 g beef eye fillet thinly sliced

2 red chillies thinly sliced

2 garlic cloves sliced

1 tsp grated ginger

1 Tbsp Black bean and chilli sauce (Chinese store)

2 heads broccoli cut into florets

1/2 bunch of kale sliced

100 g snow peas

4 shallots sliced

60 ml vegetable stock

Heat a wok or a non stick frying pan over high heat add oil and beef cook stirring for 2 minutes beef should be lightly browned remove from the pan, add chilli, ginger, garlic plus the black bean and chilli sauce to the pan cook for an other 2 minutes then add the broccoli, kale, snow peas and shallots stir add stock and cook for an other 4 minutes return beef to the pan toss until beef is warmed through. Serve with red quinoa cooked as per packet instruction.
